Job description
Over the last 13 years Rhino Africa has been repeatedly recognized as ‘Africa’s Leading Luxury Safari Company’. To ensure exclusive access for our tour operations and to become involved in one more step of our clients’ experiences, in 2010 Rhino Africa launched a specialised property division. Starting with the award-winning luxury boutique hotel, MannaBay, we have begun creating luxurious properties across the continent’s key destinations. Having conquered the Cape, Rhino Africa is proud to announce the launch of our brand new development, Silvan Safari, opening in the Sabi Sands region in November 2017.
Silvan Safari Lodge is conceptualised to redefine the notion of luxury safari, by providing guests with exclusive access to an authentic African bush experience paired with exceptional service. From waking to the resounding roar of the lion as the spectacular African sun rises over the midlands, to dipping in the crystal safari pool, champagne in hand, as the silhouetted landscape disappears with the sunset; Silvan Safari pushes the boundaries on an all-inclusive escape. Surrounded by lush vegetation on the outskirts of the Kruger National Park, Silvan Safari will boast six aesthetically pleasing modern suites each equipped with a private plunge pool. The main lodge, suspended in the indigenous treetops, provides majestic panoramic views of the Manyeleti River. The lodge will also host its very own spa, encapsulating the epitome of a luxurious safari experience.
We are looking to appoint a head chef who will lead Silvan Safari’s team of culinary connoisseurs. The kitchens at Silvan will play an integral role in both the guest experience and the property’s overall food and beverage department. Our head chef will be responsible for ensuring that memorable dining experiences remain with our guests long after they have left the lodge. The ideal candidate for this role will possess strong leadership and communication skills, with the flexibility and intuition to lead and contribute to a team of highly committed cuisiniers, as and when required. It is important to demonstrate familiarity with the latest culinary trends, an ability to think laterally and to display expert hosting skills. In addition to a genuine passion for cooking, Silvan’s head chef must possess strong written and verbal communication ability, a well-groomed manner, and indisputable attention to detail.
Responsibilities
Responsibilities will include, but will not be limited to:
- Working closely with Rhino Africa’s group executive chef to create, design, and implement menus that meet the demands and exceed the expectations of our guests
- Purchasing food-related goods and materials necessary for food production on a daily basis for the lodge and staff canteen
- Maintaining monthly food costs, as per budgets, and monitoring stock to ensure that food is not wasted
- Managing, motivating, and mentoring staff members through training and ensuring a strong, challenged, and content kitchen staff
- Introducing new ideas aimed at enhancing the product of the lodge
- Ensuring that the lodge’s food excellence standards are maintained at all times
- Ensuring that the kitchen remains neat and tidy and that food hygiene practices are upheld at all times by all staff members
- Keeping up with trends in cooking and the hospitality industry to ensure that guests have a positive experience at all times
- Working with Rhino Africa’s group executive chef to create a dietary needs recipe planner for the lodge
Benefits
Besides playing a key role in the expansion of Rhino Africa’s award-winning property portfolio, you can expect:
- R20,000 – R25,000 monthly cost to company
- An all-inclusive package: staff accommodation, three meals a day and Silvan workwear provided
- Two weeks’ leave for every six weeks worked, with a complimentary shuttle service to and from public transport stops in Nelspruit
- Ongoing training programmes and development workshops
Requirements
Our ideal head chef will:
- Hold a formal qualification from a recognised culinary institution
- Possess five+ years of experience in a leadership role in the hospitality industry
- Have a proficiency for written and verbal communication in English
- Have an outgoing personality, with exceptional guest contact skills
- Pride themselves on their talent and adaptability, as well as their integrity, leadership qualities and management skills
- Be highly knowledgeable of current leading culinary trends in both food and beverages
- Be computer literate (at least the Microsoft Suite)
Please note that preference will be given to candidates able to start on the 16 October 2017.
Please note that only South African candidates can be considered for this position and that strict preference will be given to previously disadvantaged individuals (PDIs).
