Now, we are looking to appoint a Head Chef to lead Silvan Safari’s team of culinary connoisseurs. The kitchens at Silvan play an integral role in both the guest experience and the property’s overall Food and Beverage Department. Our Head Chef will be responsible for ensuring that memorable dining experiences remain with our guests long after they have left the lodge. The ideal candidate for this role will possess strong leadership and communication skills, with the flexibility and intuition to lead and contribute to a team of highly committed cuisiniers, as and when required. It is important to demonstrate familiarity with the latest culinary trends, an ability to think laterally and to display expert hosting skills. In addition to a genuine passion for cooking, Silvan’s Head Chef must possess strong written and verbal communication ability, a well-groomed manner, and indisputable attention to detail.
Specific responsibilities will include, but will not be limited to:
- Working closely with Rhino Africa’s Group Executive Chef to create, design and implement menus that meet the demands and exceed the expectations of our guests
- Purchasing food-related goods and materials necessary for food production on a daily basis for the lodge & staff canteen
- Maintaining monthly food costs, as per budgets, and monitoring stock to ensure that food is not wasted
- Managing, motivating and mentoring staff members through training and ensuring a strong, challenged and content kitchen staff
- Introducing new ideas aimed at enhancing the product of the lodge
- Ensuring that the lodge’s food excellence standards are maintained at all times
- Ensuring that the kitchen remains neat and tidy and that food hygiene practices are upheld at all times by all staff members
- Keeping up with trends in cooking and the hospitality industry to ensure that guests have a positive experience at all times
- Working with Rhino Africa’s Group Executive Chef to create a Dietary Needs Recipe Planner for the lodge
Requirements
Our ideal Head Chef will:
- Hold a formal qualification from a recognized culinary institution
- Possess 5+ years of experience in a leadership role in the hospitality industry
- Have a proficiency for written and verbal communication in English
- Have an outgoing personality, with exceptional guest contact skills
- Pride themselves on their talent and adaptability, as well as their integrity, leadership qualities & management skills
- Be highly knowledgeable of current leading culinary trends in both food and beverages
- Be computer literate (at least, the Microsoft Suite)

Doctor Sheds 125 Lbs. with the Help of Intermittent Fasting: ‘It’s Been Life Changing’
“When my sister was diagnosed with an aggressive, rare form of cancer, I decided to change my life”
Dr. Kevin Gendreau lost 125 lbs. by taking a three-pronged approach.
The major components were: finding the proper motivation, a whole food diet without processed carbohydrates and intermittent fasting, the Fairhaven, Mass. primary care physician tells PEOPLE.
Unfortunately, the motivation came with tragedy. “When my sister was diagnosed with an aggressive, rare form of cancer, I decided to change my life,” said Dr. Gendreau, who had reached 300 lbs. by consuming “a diet full of bread, pasta and chips.” “For me, being obese was a choice. How could I literally eat myself to death while my poor sister was fighting for her life?”
After being diagnosed with hypertension, high cholesterol, diabetes, sleep apnea, plantar fasciitis and fatty liver disease in 2016, Dr. Gendreau, 30, finally decided to make a change.
He came to the realization that he had been “an emotional eater” following stressful years including the loss of his father and the challenges of medical school.
“Once I made the black-and-white decision to stop being unhealthy, everything else just fell into place,” he said. He switched to a high fat, low carb diet and started tracking his progress through MyFitnessPal.
“As my sister’s condition worsened, I became more motivated than ever to eat healthfully because I knew my niece [Sophia, now 7] and nephew [Henry, now 3] would need me to be at my best,” said Dr. Gendreau. Sadly, his sister passed away in June 2017.
The new regime centered around very specific foods including fruits, vegetables, nuts, chicken, turkey, fish, eggs, non-fat Greek yogurt, olive oil, balsamic vinegar, and non caloric spices and seasoning.
“If it’s not on that list, I don’t eat it,” said Dr. Gendreau, who also shares his before and after photos on Instagram and Facebook. “It’s astonishing to see how quickly and permanently you can lose weight with a whole food diet like this.”
After his weight hit a plateau, he turned to intermittent fasting after reading and learning more about it from The Obesity Code.
“Intermittent fasting works because it helps naturally decrease your daily calorie consumption while improving your insulin sensitivity,” said Dr. Gendreau, who eats from only 12pm to 8pm every other day. Outside of that window he allows himself black tea, black coffee and water. The 16-hour fasts helped him shed the last 50 lbs. of the 125 lbs. he lost.
He even began recommending his routine to patients. “Intermittent fasting has been life changing for many of my pre-diabetic and diabetic patients,” Dr. Gendreau said. But he cautioned, “Intermittent fasting is safe for most people, but not everyone. You should definitely talk to your own doctor before starting any diet or exercise plan.”
Creamy Sugar Snap Pea Soup
Step 1
Place oil in a large skillet; heat over medium. Add onion; cook, stirring often, 5 minutes. Add sugar snap peas; cook, stirring often, until bright green and crisp-tender, 5 to 6 minutes. Add honey and salt; cook, stirring constantly, 1 minute. Remove from heat.
Step 2
Stir together broth and 3/4 cup of the half-and-half in a medium bowl. Transfer half of the sugar snap pea mixture and half of the broth mixture to a blender. Process on high until very smooth, 30 to 60 seconds. Pour through a fine wire-mesh strainer into a large bowl. Repeat procedure with remaining sugar snap pea mixture and broth mixture. Stir lemon juice into blended mixture in bowl. Cover and chill until cold, at least 4 hours and up to 12 hours.
